Learning Objectives

  • Describe the two factors or features of the PDCAAS that are used to evaluate protein quality.
  • List eight foods or combinations, with serving size, each of which will deliver 15 grams of plant protein.
  • Name four green vegetables that have high bioavailability of the mineral calcium and four plant foods that are high in oxalate content and thus have low bioavailability of the mineral calcium.
  • Describe three options for consuming orally adequate intake of vitamin B-12.

The Certificate of Training program consists of four separate modules that build on each other. To receive the certificate associated with this training, all four modules and related tests must first be completed and a subsequent final post test exam in Module 4 must be passed with a minimum of an 80 percent in order to receive the Certificate of Training. The Certificate of Training can then be downloaded and printed from the site.
