With a growing world population, food systems are under pressure to deliver secure access to safe, affordable and high-quality diets to improve population health and nutrition worldwide. Food environments—the overall presence of food and proximity to systems of food access—play a complex role in improving nutrition outcomes. This session will analyze the impact of influencing the food environment and the resulting implications for future practice. A series of case examples are presented, including the Minneapolis Staple Foods Ordinance, as well as multiple food source-centered intervention trials. The presentation will critically appraise evidence and will provide actions affecting dynamics of food environments through systems' thinking, gap analysis, and public and community health approaches. Dietetics professionals are challenged to apply the evidence in preparation and readiness to effectively influence policies and actions that would enhance food environments, produce healthier populations, and invigorate economies.
