The goal of this module is to review the skills and tools that RDs need when contemplating work in the restaurant labeling arena. RDs need to have skills that go beyond the basics of managing a kitchen. This module provides tips for interpreting federal menu labeling laws and translating the laws to the local restaurant. The module offers resources for developing programs for restaurants, tips for employee and consumer education and guidance related to food allergies and health claims in restaurants. A case study will allow RDs to test their knowledge to identify skills they need to develop.

Learning Objectives

  • Identify basic restaurant trends and how these impact opportunities for RDs.
  • Identify the professional qualifications, knowledge, skills, tools and resources necessary to provide consultative services to restaurants to help them meet the requirements of the federal menu labeling laws.
  • Outline opportunities to provide consultative service to restaurants on menu labeling regulations in the planning phase, the implementation phase and the ongoing support phase.

This e-learning self-study includes web links to the U.S. Food and Drug Administration, the New York City Department of Health and Mental Hygiene, the Food Allergy and Anaphylaxis Network and additional Academy Individual Online Learning opportunities.

The course includes PDF files of speaker presentations and handouts as well as a downloadable CPE certificate.

The Certificate of Training program consists of four separate modules that build on each other. To receive the certificate associated with this training, all four modules and related tests must first be completed and a subsequent final post test exam in Module 4 must be passed with a minimum of an 80 percent in order to receive the Certificate of Training. The Certificate of Training can then be downloaded and printed from the site.
