Erin Palinski-Wade, RD, CDE, LDN, CPT

Erin Palinski-Wade is a nationally recognized nutrition, diabetes and fitness expert, and the founder and owner of Vernon Nutrition Center, LLC, a nutrition counseling group focused in the areas of weight management, diabetes, cardiovascular disease, gut health, sports nutrition, and general wellness. She has contributed her expertise to media outlets such as The Dr. Oz Show, The Doctors, The Early Show, Fox News, Food Network, and MSNBC. She frequently serves as a media spokesperson, nutrition consultant, and speaker.

Erin is the author of multiple publications including the 2 Day Diabetes Diet, Belly Fat Diet For Dummies and Walking Off The Weight For Dummies. She is also a regular contributor to publications including Diabetes Forecast, Diabetes Self-Management Magazine, and

As a mom of three young children, she shares real life nutrition advice on her blog and YouTube Channel, Healthy Mom, Happy Family.

Dr. Freeman is also the Director of Illinois Tech's Center for Nutrition Research (CNR). Dr. Burton-Freeman's research interests are in addressing risk factors of cardio-metabolic disease through dietary approaches focused on whole foods and their unique nutritional/bioactive attributes. Her interest lies at the intersection of food's physical-chemical properties and their impact on physiological processes including the dynamic relationship and reciprocal interactions with the gut microbiome affecting human biology and health status.

Britt Burton-Freeman, PhD

As the CNR Director, Britt Burton-Freeman leads a nutrition and health initiative with food industry partners and government collaborators to provide critical science that supports policy and dietary recommendations and innovative solutions promoting nutritional quality and healthy food choices to improve the health of Americans.

Dr. Burton-Freeman is actively involved in multiple professional societies dedicated to health and disease abatement including the American Society for Nutrition, the Obesity Society, the American Chemical Society and the Institute of Food Technologist. Dr. Freeman publishes in top journals and is co Editor-in-Chief of Nutrition and Healthy Aging.

Dr. Burton-Freeman received her BS in Dietetics from the California State University, Chico, MS and PhD in Nutritional Biology from the University of California, Davis and completed a postdoctoral fellowship in the Department of Internal Medicine at University of California, Davis. Dr. Burton-Freeman has held professional appointments in academia and the biotech industry leading research programs and teams to deliver on basic and clinical science objectives.
