Beth Doerfler, MS, RDN

Beth Doerfler is currently a Clinical Research Dietitian with Division of Gastroenterology at Northwestern Medicine in Chicago, Illinois She has authored co-authored several book chapters and journal articles on diet and lifestyle modification in gastrointestinal related diseases including several on eosinophilic gastrointestinal disease management.

Lori Welstead, MS ,RD, LDN

Lori Welstead is a Registered Dietitian with the Section of Gastroenterology, Hepatology and Nutrition at the University of Chicago Medicine. She works with a variety of patients who have gastrointestinal conditions ranging from eosinophilic gastrointestinal diseases, celiac disease, Crohn’s disease, and ulcerative colitis to irritable bowel syndrome, fatty liver disease, and obesity. She has authored articles on the various gastrointestinal diseases.
