Nutrition education has a positive impact on knowledge and athletic performance. In recent years, there has been an increase in position papers on dietary guidelines outlining optimal intake and timing of food, fluids and supplements for athletes. Yet, despite increased sports nutrition information, many athletes still fail to meet nutritional guidelines for optimal performance. There are many reasons for their substandard diets including issues related to enough time, money, taste preferences, culture, attitudes, convenience and basic cooking skills. Dietitians are uniquely positioned to provide nutrition education and culinary guidance to athletes. Learning techniques to create budget friendly, eye appealing plate performance power for athletes via online, live streaming culinary sessions is a key tool for the sports dietitian in this pandemic era. The intent of this webinar is to demonstrate key culinary techniques and the logistical preparations necessary to optimize the performance plate via live streamed sports nutrition culinary sessions. Sports dietitians are uniquely positioned to provide the culinary education to athletes to empower them to be able to meet their needs and the sports nutrition guidelines.

Dr. Hope Barkoukis, RDN, LD, FAND

Dr. Hope Barkoukis, RDN, LD, FAND is Chair of the Department of Nutrition, a past Board member for The Academy of Nutrition & Dietetics, and the creator/ faculty lead for the Jack, Joseph, Morton Mandel Wellness & Preventive Care Pathway program for medical students. Additionally, she was appointed by the CWRU Board of Trustees as the inaugural recipient of the Jack, Joseph, Morton Mandel Professorship in Wellness and Preventative Care. In 2018 the Pathway received an award for Innovation in Teaching future health care professionals from the Alliance for a Healthier Generation. Dr. Barkoukis has received many teaching awards including the 2019 Outstanding Dietetic Educator from NDEP and the Ohio Academy of Nutrition and Dietetics, Top Prof, and the John S. Diekman Graduate Award for teaching excellence. She has advanced training in culinary arts and has presented countless culinary nutrition sessions for consumer and professional audiences, including recently for over 300 attendees at the national Food, Nutrition and Exhibition, fall 2020. Hope's research areas include aging and glucose metabolism, culinary medicine in medical education and liver disease.
