Speaker Jack Norris will review the latest research on iron and vegetarians. Jack will cover the background and function of this crucial nutrient, current deficiency rates and the inhibitors and enhancers of absorption in plant foods. He will also give tips on counseling vegetarians and vegans on iron and iron-containing foods.

  2. The participant will be able to explain the difference between storage iron deficiency and iron deficiency anemia.
  3. The participant will be able explain the difference between heme and non-heme iron and name the main two inhibitors and the main enhancer of heme-iron absorption.
