While low- and no- calorie sweeteners (LNCS) are commonly used as a substitute for sugar in drinks, there are far more applications beyond beverages. LNCS are more widely used than ever due to constant food and beverage innovation driven by consumers seeking alternatives to sugar. It is important for RDNs to understand current consumer trends in regard to LNCS, as well as their use in various food and beverage products, and the implications for clients with diabetes. This program will also discuss the practical application of LNCS in cooking and baking.
