Dr. Ellis earned her PhD from the Department of Nutrition Sciences at the University of Alabama at Birmingham. Previously, she received a BS in Biology from the University of Illinois at Urbana-Champaign and her MPH in Nutrition at the University of North Carolina at Chapel Hill. Building on her background as a clinical dietitian in inpatient and outpatient settings, Dr. Ellis' research interests include nutritional influences on changes in body composition and nutritional genomics.

Speaker

Ginger is a Seattle-based registered dietitian nutritionist. She owns Ginger Hultin Nutrition Practice where she helps clients solve complex health mysteries with an integrative approach. She specializes in anti-inflammatory diets, integrative oncology nutrition, supplements, and nutrigenomics. She has authored two nutrition books: Anti-Inflammatory Diet Meal Prep and the How to Eat to Beat Disease Cookbook. She is a graduate of the University of Washington and Bastyr University.

Rebekah is doctoral candidate at The University of Alabama in the Department of Human Nutrition, Hospitality and Sport Management. Her research is focused on dietary behaviors in adults with inflammatory bowel disease (IBD). She is passionate about nutrition education.

Brooke completed her undergraduate degree at the University of Wisconsin-Whitewater (UWW) in physical education with an emphasis in health and human performance. She continued her education at San Diego State University, earning a dual masters of science in nutritional sciences and exercise physiology, as well as completed the didactic program in dietetics.

Brooke completed her doctoral training at the University of California, Davis working with Dr. Francene Steinberg on the implementation and effectiveness of the Dietary Approaches to Stop Hypertension (DASH) diet for outpatient heart failure management. Her research interests include nutrition for cardiovascular disease prevention and management, clinical comparative effectiveness research, dietetics education and clinical training, interdisciplinary health care education, implementation science, delivery science, and health systems science.
