Tea is the 2nd most consumed beverage in the world and has long been associated with providing health benefits, and new research helps us understand why. In this webinar, Mr. Alexander White, a master tea brewer covers the culinary aspects of Camellia sinensis, true tea. He provides an overview of cultivars of tea and agricultural practices to produce the various teas commonly found in the marketplace. Dr. Joy Dubost then provides a research overview of flavonoids, their importance, and how unsweetened tea contributes to flavonoids in the diet. Finally, Dr. Taylor Wallace presents the results from two recent systematic reviews of randomized controlled trials and prospective cohort studies, which explore the connections between tea and heart health.

Speakers:

Joy Dubost, PhD, RD

Head of Scientific Affairs & Nutrition, Americas at ekaterra. Dr. Dubost oversees nutrition, regulatory affairs, labeling compliance, safety and quality for the Americas. She is engaged with setting the scientific short and long term strategic direction, including the research agenda for all ekaterra brands in the Americas, ensuring alignment with the global agenda. Prior to joining ekaterra, Dr. Dubost was the Head of Nutrition & Health for North America at Unilever. She was responsible for nutrition and health for all foods and refreshment categories and brands in North America, as well as leading external engagement, including food policy and advocacy.

Prior to joining Unilever, she served as the Senior Director of Science and External Affairs at the Beer Institute where she was the primary scientist providing expertise on scientific evidence and communications as it relates to moderate alcohol consumption. Prior to this role, she served as the Senior Director of Nutrition at the National Restaurant Association where she provided leadership and expertise on a wide spectrum of food science and nutrition issues related to the restaurant and foodservice industry. Dr. Dubost was also previously employed as a Principle Scientist at PepsiCo Incorporated, where her focus was in product development and nutrition communications. She received a Ph.D. in food science from the Pennsylvania State University, a M.S. degree in food science at University of Georgia, and a B.S. in Nutrition and Chemistry at Hood College. Dr. Dubost is a Registered Dietitian and completed her dietetic internship at the University of Michigan Hospitals.

Alex White

Alex White is the Product development R&D Lead and Lead Tea Taster for ekaterra North America, he has been 20 years with the company and has worked in R&D across foods and beverage in Europe and North America. He currently manages the innovation program for Lipton, Tazo & Pukka in the U.S. and Canada and also serves as the region's operational tea taster, blender and tea expertise point of reference. Alex grew up in a very multicultural environment living and loving different countries and speaking several languages, his educational background is as a Biochemist from the University of Leeds, UK, with a personal passion for foods, herbs, plants and tea. Within the company he has had the opportunity to further expand his passion through an ongoing training program which has taken him to the fields of Kenya, Malawi, Indonesia, Argentina, amongst others, to really mature his understanding of the role of different origins, processing techniques and in general the tea supply chain from leaf to cup. During his career in North America, he has been eager to share tea knowledge and passion both within the company and externally, featuring in a documentary with Darby Stanchfield Journey with a tea master and in numerous commercials for the Pure Leaf brand.

In his spare time Alex enjoys anything to do with self-sufficiency: canning, foraging, growing his own vegetables, fishing, DIY, etc.

Taylor C. Wallace, PhD, CFS, FACN (Think Healthy Group, Inc.)

Taylor C. Wallace, PhD, CFS, FACN, is Principal and CEO at the Think Healthy Group and a Professor in the Department of Nutrition and Food Studies at George Mason University. His academic research interests are in the area of nutritional interventions to promote health and prevent health and the onset of chronic disease. Dr. Wallace has a PhD an MS in Food Science and Nutrition from The Ohio State University and a BS in Food Science from the University of Kentucky. He operates the popular food and nutrition blog, www.DrTaylorWallace.com, is a member of Forbes Health Advisory Board, and a regular guest commentator in the mainstream media, regularly seen on NBC4 Washington and the Dr. Oz Show. He is a fellow of the American College of Nutrition and is the 2015 recipient of the Charles A. Regus Award, given by the American College of Nutrition for original research and innovation in the field of nutrition. Dr. Wallace is a Senior Fellow of the Center for Magnesium Education & Research, the Editor-in-chief of the Journal of the Dietary Supplements, Deputy Editor-in-chief of the Journal of the American College of Nutrition, Nutrition Section Editor of Annals of Medicine, the editor of seven academic textbooks, author of over 75 peer-reviewed manuscripts and book chapters, and author of the cookbook, Sizzling Science. The Huffington Post calls Dr. Taylor Wallace "the nation's premier food and nutrition guru."
