Kim Fremont brings over 43 years of experience in healthcare and long-term care nutrition, with a background spanning clinical care, foodservice, and operations in both acute and post-acute settings. In her role as Co-founder and Senior Vice President of DiningRD she guides a consulting program supporting over 5,000 communities nationwide and collaborates with a team of more than 900 registered dietitians. Kim is passionate about equipping clinicians with practical, evidence-based strategies to navigate complex care challenges. She is a strong advocate for the role of nutrition and dining in long-term care, believing they are fundamental not only to clinical outcomes, but also to dignity, comfort, and quality of life—where excellent care and hospitality should always go hand in hand. Kim holds degrees in Medical Dietetics and master's degree in Instructional Technology and is an active member of the Academy of Nutrition and Dietetics and the DHCC practice group.

Shelby Rodriguez is a Registered Dietitian Nutritionist, Board Certified Specialist in Gerontological Nutrition, and Fellow of the Academy of Nutrition and Dietetics. She is currently the President of the Oregon Academy of Nutrition and Dietetics, and serves as a Subject Matter Expert for the Commission on Dietetic Registration. Shelby's professional experiences spans clinical nutrition, leadership, public health, and education. She recently served as the lead developer for the Academy's End of Life Microcertificate, helping create national educational resources to support dietitians in providing evidence based, compassionate care. Today, Shelby will share practical strategies for navigating nutrition care at the end of life, drawing on current evidence, clinical experience, and interactive case studies to help dietitians confidently support patients, families, and interdisciplinary care teams.
