Speakers

Kelly Thornton, MBA, RDN, LD with H-E-B

Kelly Thornton is a RDN, LD and Nutrition Services Program Manager at H-E-B, where she manages a team of more than fifty retail dietitians. She graduated from the University of Texas at Austin with a bachelor's degree in Nutrition in 2012 and she earned a Master's degree in Business from the University of North Texas in 2018. She also became Project Management Professional certified in 2020. For the past ten years, she's worked in the medical industry in various capacities; before coming to H-E-B, Kelly worked with Centene, a Medicare/Medicaid/ACA insurance provider. There, she managed a team of RNs, RTs, CDEs, and RDs who provided telehealth services to members. In her free time, Kelly enjoys reading, travelling, and exploring new restaurants.

Elizabeth Hall, MS, RD, LD with K-VA-T Food Stores Inc.

Elizabeth is the Corporate / Retail Registered Dietitian for K-VA-T Food Stores Inc., parent company to Food City supermarkets. She works with the Healthy Initiatives team and marketing to be a health and nutrition resource by providing education and media interviews as well as developing community partnerships in Food City stores and store areas. Elizabeth also manages the Food City Wellness Club, a free loyalty program for customers providing health-related content, recipes, and coupons on better-for-you products. Elizabeth is thrilled that her role with Food City promotes health in the familiar environment of a grocery store, where most people make their decisions about food, and positively impacts consumer behavior change.

Carrie Taylor, RDN, LDN, RYT with Big Y Foods, Inc.

Carrie's love for nutrition stems from her love of food and its impact on exercise. For over two decades, her goal has been to empower others by demystifying fads and negative relationships with food and body through fun, honest, stress-free education. Since 2005, Carrie has had the awesome opportunity to watch the footprint of Big Y's Living Well Eating Smart program grow from one dietitian to a team of 5. Each day she works alongside one of the most impactful and dedicated supermarket dietitian teams in New England by partnering with vendors for the Living Well Eating Smart newsletter and contributing to in-store voice overs, workshops, Food in :60 and #BigYLocalLove videos, as well as television, newspaper, radio and social media outreach. Carrie is a Progressive Grocer 2019 Top Woman in Grocery and has expanded her studies into the integrative realm by completing her Yoga Teacher, Mindful Outdoor Guide and Journey Dance trainings at the Kripalu Center for Yoga & Health. She calls Western Massachusetts home where she enjoys all it has to offer with her 6-year-old son, Andrew James, and dog Bigelow Beau Le Doux.
