Author
Stacey is a multi-state-licensed RDN, with demonstrated expertise in Inflammatory Bowel Diseases (IBD) nutrition. Stacey received her undergraduate education from The University of Texas at Austin and trained as a dietitian at The University of Oklahoma Health Sciences Center in Oklahoma City. Stacey was the inaugural Dietitian Apprentice selected to receive post-graduate-level IBD nutrition training at Cedars-Sinai in Los Angeles, California.
Since 2022, Stacey has owned her own virtual IBD nutrition private practice, where she has helped people with IBD improve their food-related quality of life, heal from malnutrition, wean from nutrition support, and approach surgical nutrition with safety, confidence and a plan for healing alongside standard medical care. She enjoys collaborating on education development and research projects to expand and improve nutrition science.
Alongside her private practice, Stacey’s new clinical adventure takes her to The Digestive Health Center at UCHealth in Denver, Colo., where she is joining the staff as an outpatient clinical GI dietitian. She is looking forward to many mountain hikes with her husband and her deaf dog.

Christianna Moran is an RDN and the owner of a private practice based in Massachusetts, where she specializes in celiac disease, inflammatory bowel disease, disorders of gut-brain interaction as well as additional complex GI conditions. She provides compassionate and holistic nutrition care to patients.
She serves on the Medical Advisory Board for the National Celiac Association and is an active volunteer with the Crohn’s and Colitis Foundation, frequently speaking at national virtual support groups to educate and empower individuals living with IBD. She is passionate about advancing the field of nutrition through evidence-based practice and remains dedicated to staying at the forefront of research in digestive health.

Beth Rosen, MS, RDN, CDN, is a weight-inclusive registered dietitian specializing in gastrointestinal (GI) nutrition and disordered eating. With nearly 30 years of experience, she has helped clients manage conditions such as IBS, SIBO, reflux and gastroparesis through her virtual practice, Beth Rosen Nutrition.
Beth also educates health professionals via webinars, national and international conferences, and peer supervision. Currently, she works with Oshi Health, providing integrated care for patients with GI conditions and mentoring clinicians in all aspects of gastrointestinal medical nutrition therapy.
She is the co-founder of the EDGI Training Project, co-author of Comprehensive Medical Nutrition Therapy for Co-Occurring Gastrointestinal and Eating Disorders, and developer of related professional training programs. Beth's work has been published in peer-reviewed journals, and her upcoming book, Gut Goals: A Practical Guide for Managing IBS, will be released in early 2026.
Shelby Yaceczko, is a Doctor of Clinical Nutrition and an advanced practice registered dietitian nutritionist at UCLA Health. She is an Assistant Clinical Professor in the School of Health Sciences Clinical Nutrition programs at the University of Pacific. She is also a practicing dietitian who specializes in gastrointestinal disorders and complex surgical patients with a focus on nutrition support and cancer care.
Shelby is the founder and CEO of a digital health company, F-U Cancer, where she is growing a diverse team to support patients and caretakers impacted by cancer using technology to improve cancer care outcomes.
Shelby is actively involved in multiple Academy Dietetic Practice Groups where she holds leadership roles. She is the current Chair on the Commission of Dietetic Registration 2025-2026 where she serves the public at large by supporting practitioner competence, quality practice, and career advancement for the profession.
