Bob Duffell-Hoffman is the Director of Nutrition Systems for the Medical University of South Carolina (MUSC) Catawba Division and a Regional Clinical Manager with Morrison Healthcare. With over 20 years as a CNM and 10 years as a Regional Clinical Manager with Morrison Healthcare, he has assisted nearly 50 hospitals with regulatory readiness and clinical optimization. He has also advised clinical nutrition teams on implementing order writing protocols, EPIC EMR conversions, MyDining menu ordering software implementation, malnutrition diagnosis and reimbursement tracking systems, and policy and procedure optimization. When not training and mentoring the next generation of RDs and CNMs, he does the same as a high school cross country and track & field coach.

With 25+ years of global experience, she integrates behavioral science, nutrition informatics, and AI ethics to support responsible technology use in dietetics practice. She provides independent consulting on AI-informed nutrition strategies for Food Evidence and international initiatives and leads interdisciplinary research on algorithmic influence in food choices. Dr. El-Kour delivers advanced education for clinicians navigating emerging digital nutrition ecosystems.

James Griffith is the Clinical Informatics Dietitian at MarinHealth Medical Center, where he splits his time seeing patients and managing nutrition information. With over 8 years of experience as an inpatient dietitian, James has primarily worked with Epic and CBORD to optimize nutrition workflows for both clinical and production teams. His current goal is to help the outpatient dietitians improve nutrition care after discharge. When he is not at work, James enjoys practicing guitar and spending time in the yard with his poodle-mix, Gus.

Meredith Mannix is a Clinical Instructor and Dietetics and Nutrition Therapy Coordinator in the College of Health and Behavioral Sciences at the University of Central Arkansas. In this role, she oversees accreditation compliance, coordinates student cohorts and research projects, and teaches undergraduate and graduate courses in medical nutrition therapy, community nutrition, and statistics. Her research interests are child nutrition, nutrition education, and innovative approaches to training in dietetics. Prior to her faculty appointment, she served as a Nutrition Consultant for the Arkansas Department of Education, providing training, assistance, and program monitoring for over 30 school districts statewide.

She is passionate about advancing the field of dietetics and ensuring that nutrition departments work at the top of their scopes. Brittney Patterson is an experienced clinician with over a decade in critical care and more than seven years in nutrition informatics. As Clinical Implementation Manager at HealthLeap, she supports dietitians across the country with leveraging technology to gain actionable insights from EHR data to quickly identify, prioritize, and treat patients at risk for malnutrition, leading to better health outcomes. Formerly an Advanced Practice RD at Stanford Health Care, Brittney led multiple innovations to enhance patient safety and workflow efficiency, including EHR-integrated tools that streamline nutrition support. These included implementing tube feeding on the MAR, creating an order validation pop-up to prevent unsafe tube feeding orders in the ICU, and developing a Nutrition Provision tool that automatically calculates nutrition support provision received. Her work bridges clinical expertise and technology to advance the role of dietitians in the era of AI-driven care.

Alison Ruffin is the director of clinical nutrition and lactation at Dayton Children's Hospital in Ohio. She is a registered and licensed dietitian and a certified lactation counselor. Alison earned her bachelor's degree in dietetics at the Miami University of Ohio and her Master of Health Administration through Ohio University. Alison was a member of the inaugural nine-month quality improvement class offered at Dayton Children's Hospital in 2016. She is now serving as a quality improvement coach for the course for the ninth year in a row and is an advocate for building dietitian quality improvement skills and establishing rich access to data to help improve quality and efficiency of care.

Monica Schmitt is the System Director of Clinical Nutrition for NYC Health + Hospitals and has been with Sodexo for over 10 years. She has led enterprise-wide EHR optimizations, including development of the Malnutrition Cares Score (MCS) and tracking malnutrition-related readmission rates. Her work leverages health informatics to improve malnutrition identification, integration of ONS and enteral products into the MAR, and monitoring of social determinants of health data. Monica earned her B.S. in Nutrition from SUNY Plattsburgh and completed her dietetic internship at Sage College. She recently presented a poster at FNCE on EHR-driven malnutrition care innovation.
